Sausage Patties with Spicy Beans

Ingredients
- 1 onion, finely chopped
- 800g tinned Borlotti beans (drained)
- 1 teaspoon dried chilli flakes
- 10 cherry tomatoes, halved
- 8 large, good quality pork sausages
- zest of an orange
- 1 teaspoon cinnamon
- 1 teaspoon mixed spice
- salt and pepper to taste
- 5 tablespoons olive oil
Directions
| 1. | Pour the oil into a frying pan and fry the onions for five minutes until golden. |
| 2. | Sprinkle in the chilli flakes and add in the beans and tomatoes. Simmer gently. |
| 3. | Remove the sausage meat from the skins and put in a large bowl. |
| 4. | Add the cinnamon, orange zest and mixed spice. Mix together and shape into 8 patties |
| 5. | Pre-heat a griddle pan and cook the sausage patties for 5 minutes on each side |
| 6. | Serve with the bean sauce. |
